Catherine and Al Renzi founded Yellow Springs Farm with a mission to connect sustainable landscapes with sustainable food systems.The native plant nursery and artisanal goat cheese dairy consists of a historic farmhouse, dairy barn, springhouse and pond on eight acres of land in Chester Springs, PA. The most important part of Yellow Springs Farm cheeses is the exceptionally good milk from their Nubian dairy goats - a breed carefully selected for their naturally nutrient rich milk. Their herd browses pasture, eats local hay and organic grains, cleans up invasive plant species in the woodland and basks in the sun. Al and Catherine craft both fresh and aged artisanal goat cheeses and goat milk yogurt, using age-old processes borrowed from both French and Italian traditions. Their original interpretation of these recipes and inclusion of farm-raised herbs, nuts, and honey make many unique Yellow Springs Farm Goat Cheeses. Each small batch is handmade, and never includes preservatives or anything artificial.
